  • 4 thin-sliced boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste

  • 1 cup Panko breadcrumbs
  • 1/2 cup freshly grated Parmesan
  • 2 tablespoons chopped fresh parsley leaves
  • 1/2 teaspoon garlic powder


  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  2. In a shallow bowl, whisk together flour, paprika, salt and pepper to taste. In another shallow bowl, whisk together eggs. In a third shallow bowl, whisk together Panko, Parmesan, parsley and garlic powder.

  • For the crepes:
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 tablespoon unsalted butter, melted
  • For the filling:
  • 1 tablespoon unsalted butter
  • 1/2 cup finely chopped yellow onion
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped fresh mushrooms
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped fresh spinach
  • 1/2 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese


  1. For the crepes, in a blender, combine flour, salt, eggs, milk, and melted butter, and process until smooth. Refrigerate the batter for at least 30 minutes.
  2. Heat an 8-inch nonstick skillet over medium heat. Brush the pan with a little melted butter. Pour 1/3 cup of the crepe batter into the pan, tilting to evenly coat the bottom. Cook until the edges of the crepe start to curl away from the pan, about 2-3 minutes. Carefully flip the crepe and cook for another 1-2 minutes. Repeat with the remaining batter and set aside.
  3. For the filling, heat butter in a large skillet over medium heat. Add the onions and cook until translucent, about 5 minutes. Add garlic, salt, and pepper, and cook for an additional 1 minute. Add the mushrooms and cook for another 5-7 minutes until tender. Stir in parsley and spinach and cook until spinach is wilted.
  4. Stir in ricotta and Parmesan cheese and cook for another 1-2 minutes until the mixture is heated through. Take off from heat, cool for a bit and set aside.
  5. To assemble, place a spoonful of filling in the center of each crepe and fold in half. Serve hot and enjoy!
