Wow, would you look at that! ABC News' 'World News Tonight' has topped the 2019-2020 season in viewership. That's quite an achievement, don't you think? Well, I bet the news they report on is just as juicy as the veggies in my salad. Speaking of salad, let me tell you about one of my favourite recipes.
Green Goddess Salad
Ingredients:
- 2 cups packed torn romaine lettuce
- 1 cup thinly sliced cucumber
- 1/2 cup sliced radishes
- 1/2 cup thinly sliced red onion
- 1 avocado, pitted, peeled and sliced
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
- 2 tablespoons chopped fresh tarragon
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- In a large bowl, combine the romaine, cucumber, radishes, red onion, avocado, chives and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, tarragon, garlic, salt and pepper.
- Pour the dressing over the salad and toss to coat.
- Serve immediately and enjoy the fresh flavours!

Spicy Baked Sweet Potato Fries
Ingredients:
- 4 small to medium sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 425 degrees F.
- Peel and cut sweet potatoes into thin fries.
- In a large bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt and black pepper.
- Add the sweet potato fries and toss to coat evenly.
- Spread the fries out on a baking sheet in a single layer.
- Bake in the preheated oven for 15 minutes, then flip the fries over and bake for another 10-15 minutes, or until golden brown and crispy.
- Remove from the oven and serve immediately with your favourite dipping sauce.
